Sit without haste, happiness needs space.
My cuisine begins with working closely with the ingredient, seeking to truly understand its potential. Technique allows me to shape thought, refine the gesture, and guide the ingredient towards its most authentic expression.
From this, my idea of cuisine takes form: a language born from encounters, where different influences engage in dialogue and find harmony without losing their identity.
I was born far away and grew up across different latitudes. Italy is the place that welcomed me—a fertile country for those who cook—where I interpret what nature offers by following its rhythms, with the awareness that tradition is alive, evolving, and open to the present.
A forward-looking perspective, without ever losing sight of the guest and the pleasure of being at the table.

A pragmatic and precise cuisine, where taste comes before aesthetics. The ingredient remains at the center, worked without excess to create dishes that are essential, clear, and contemporary.

The exotic does not belong to distance, but to a gaze capable of recognizing origin within change. Through taste, the world becomes a shared experience.
QUID – Unique Italian Dining is located in the heart of Rome, within the historic Palazzo Marignoli, a late 19th-century building that carries the city’s history and, following its redevelopment by Allianz Italy, has become one of the most representative landmarks of the historic center.
Within this setting, QUID – Unique Italian Dining takes shape: a project that brings together cuisine, art, and architecture in a continuous dialogue with time and the city.
The spaces, defined by essential volumes, soft surfaces, and light conceived as a design element, welcome the dining experience without overpowering it, allowing each component to find its place within a harmonious composition.
The culinary vision is shaped through the collaboration with Enrico Bartolini and the guidance of chef Juan Camilo Quintero, whose contemporary cuisine draws strength from the centrality of the ingredient, the precision of the gesture, and an absolute respect for raw materials.
Each dish becomes a coherent expression within this context, translating into culinary form the same tension between essentiality and depth that defines the space.
Within this balance between memory and contemporaneity, QUID – Unique Italian Dining creates an experience where cuisine becomes a cultural expression of the city.
