Two identities coexist in the way I conceive a dish: one Greek, rooted in essentiality, immediacy and deep origins; the other Italian, which taught me method, structure and technical precision. From this encounter, a personal language is born — one that constantly evolves.

Contemporary by vocation, Mediterranean by nature. A cuisine rooted in the place where it is born, shaped by seasonality and an ultra-short supply chain made of human relationships. Technique and sensitivity intertwine to create honest harmonies — distinctive, vibrant, never static.
If the dish allows it, I make room for play, for a smile, for that light-hearted memory of childhood that brings back who we were before we even began to cook. I once imagined tzatziki as a dessert. Madness. But garlic, if you let it ferment with honey, will surprise you.
San Felice is an estate in the municipality of Castelnuovo Berardenga, province of Siena. It is owned by Gruppo Allianz S.p.A., which restored the original medieval village and turned it into a charming widespread hotel, the five-star Borgo San Felice, the only Relais & Châteaux hotel in the Chianti Classico area, with a restaurant, Il Poggio Rosso, which recently had its Michelin star renewed.
