Our fifth restaurant in Italy is located within FICO Eataly World (the world's largest agri-food park) in Bologna. Perfectly aligned with our celebration of the biodiversity that makes Italy unique, CINQUE draws on the traditions of the past and the trends of the present. The informed and responsible use of ingredients (largely acquired from the Farming Factories within the park) goes hand-in-hand with culinary thinking that takes inspiration from tradition and interprets it in a modern, delicate way. The result is unique, authentic, recognisable and well-balanced flavours, where the creativity is not just about style, but also aims to surprise and delight the taste buds. CINQUE will also provide a stage for the incredible cooks from the prestigious Le Soste association, which the restaurant will host on rotation every two months, offering a cross-section of Italian cuisine's rich heritage through varied and original styles of cooking.

The wine list takes diners on a journey through the vineyards of Italy and the country's incredible winemaking heritage. The selection of the best Italian wines, from north to south, recounts varieties and terroirs with thousands of years of history.
The restaurant has a seven-course tasting menu and an à la carte menu with fifteen dishes that promote biodiversity through authentic flavours, high-quality ingredients, Mediterranean tradition, research and innovation.

Salvatore Amato from Puglia, born in 1989, was recruited as resident chef of Ristorante Cinque, having previously worked in the Milan team. Working alongside him is Roberto Redolfi, the restaurant manager.
